Mushroom Pate with Almonds


 INGREDIENTS

2 Tbsp Margarine

1 Small onion, chopped (1/4 cup)

1 clove garlic, minced

1 ½ cup sliced mushrooms

½ tsp tarragon

1 cup blanched whole almonds

1 Tbsp lemon juice

2 tsp soy sauce

Dash white pepper

2 Tbsp cream cheese


METHOD

Melt margarine in a large skillet, add onion, garlic and mushrooms, Saute until tender but not browned. Add tarragon, stir until it is softened. Pour mixture into a bowl or food processor. Add remaining ingredients, process until the mixture is smooth. Spoon into a serving bowl. Top with garnish of your choice. Makes 1 ½ cups.
