Sausage and Potato Casserole

 


Throw potatoes, sausage, cheese, liquids, and seasoning in the pressure cooker, and forget about it! Ready to serve in just 25 minutes, this cheesy, comforting sausage and potato casserole is a delicious and hearty family meal made with just 2 main ingredients.


1 1/2 lb (700g) fresh diced potatoes

1 lb (450g) kielbasa sausage, cut into small pieces

1 small onion, diced

2 or 3 garlic cloves, minced, optional

2 1/2 cups shredded cheddar cheese

1 cup (250ml) chicken or vegetable stock

1/2 cup (125ml) milk

1/4 cup (60ml) heavy whipping cream

1/2 tablespoon unsalted butter, diced

1 teaspoon Italian seasoning, optional

1/2 teaspoon Cayenne pepper, optional

Salt and pepper, to taste


1. To make the Instant Pot Sausage and Potato Casserole: Combine diced potatoes, chopped kielbasa, onion, butter, and 2 cups of cheese in a 6-quart slow cooker. Keep the cheese on top of the other ingredients.


2. In a separate bowl, combine chicken stock, milk, heavy whipping cream, garlic, Italian seasoning, Cayenne, salt, and pepper. Pour the mixture over the potatoes and sausage. Sprinkle remaining cheese over top.


3. Cook on stew for 8-10 minutes. It is done when your potatoes and onions have cooked through. Be careful not to overcook the potatoes. If you like, you can transfer the sausage and potatoes to a baking dish and broil in the oven for 2 minutes to crisp up the top. Serve the Instant Pot Sausage and Potato Casserole immediately.
