Lemon Garlic Butter Bean Salad

 

Ingredients

1 (15 ounce) can butter beans drained

Marinade:

3 tablespoons extra virgin olive oil

2 tablespoons lemon juice

2 cloves garlic minced

2 tablespoons chopped fresh parsley

1 teaspoon Dijon mustard

Kosher salt

Pepper


In a bowl, whisk together the marinade ingredients. Taste and adjust for salt and pepper. Add the butter beans and mix to combine. You can serve it right away, but the longer you let it marinate, the more flavorful it becomes.
