chocolate cupcakes


 

Moist chocolate cupcakes

makes about 20

1/2 cup cocoa

1 cup flour

1 cup sugar

1 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

1 egg

1/2 cup warm water

1/2 cup buttermilk

1/4 cup canola oil

1/2 tsp vanilla extract


Preheat oven to 180 and line cupcake trays with cupcake liners.

Sift cocoa, flour, sugar, baking soda, baking powder and salt into a bowl.

Add the egg, water, buttermilk, oil and vanilla extract and mix with an electric beater for +- 3 minutes.

Using a 1/3 cup measure, scoop mixture into prepared cupcake trays.

180 for 18 - 20 minutes (to test if ready: prick cupcake with a toothpick and if it comes out clean with no mixture on, then take the cupcakes out the oven). Cool for at least 30 minutes before icing.
